Ingredients:
For Paneer Dumplings:
- 1 liter full-fat milk
- 2 tablespoons lemon juice or vinegar
- 2 cups water
- 1 cup sugar
- 4-5 cups water (for boiling paneer balls)
For Milk Syrup:
- 1 liter full-fat milk
- 1 cup sugar
- A few saffron strands
- 1/2 teaspoon cardamom powder
- Chopped nuts (almonds, pistachios) for garnish

Prepare Paneer:
- Boil 1 liter of milk in a heavy-bottomed pan. Once it boils, reduce heat and add lemon juice or vinegar gradually while stirring until the milk curdles.
- Once the whey separates from the curdled milk, strain it using a muslin cloth or cheesecloth. Rinse the paneer under cold water to remove the acidic taste.
- Press the paneer under a heavy object for about 1 hour to remove excess water. Then knead the paneer until smooth.

Make Paneer Balls:
- Divide the kneaded paneer into equal-sized portions and roll them into smooth balls. Flatten them slightly to form discs.
- In a separate pot, boil 2 cups of water with 1 cup of sugar. Once the sugar dissolves, gently drop the paneer balls into the boiling syrup.
- Cook the paneer balls in the syrup for about 10-12 minutes on medium heat. They will double in size and become spongy. Remove from heat and let them cool.

Prepare Milk Syrup:
- In another pot, boil 1 liter of milk. Add sugar, saffron strands, and cardamom powder. Stir continuously to prevent the milk from sticking to the bottom.
- Simmer the milk until it reduces slightly and thickens to a creamy consistency. Keep stirring occasionally.

Assemble Rasmalai:
- Gently squeeze the cooked paneer balls to remove excess syrup.
- Place the paneer balls in the saffron-infused milk syrup. Let them soak for at least 2-3 hours in the refrigerator to absorb the flavors.

- Garnish Rasmalai with chopped nuts like almonds and pistachios.
- Serve chilled for the best taste and texture.
