Cool and Refreshing: Dahi Vada Recipe

Delight your taste buds with the creamy and tangy flavors of Dahi Vada. This beloved Indian snack, consisting of deep-fried lentil dumplings soaked in yogurt and topped with spicy and sweet chutneys, is a perfect balance of textures and tastes.

Ingredients:

For Vada:

  • 1 cup urad dal (black gram lentils), soaked overnight
  • 2-3 green chilies, finely chopped
  • 1 inch piece of ginger, grated
  • Salt to taste
  • Oil for deep frying

For Yogurt Mixture:

  • 2 cups thick yogurt (curd)
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Sugar to taste (optional)
  • Water (as needed to thin yogurt)

For Toppings:

  • Tamarind chutney
  • Green chutney
  • Chaat masala
  • Roasted cumin powder
  • Chopped coriander leaves
  • Sev (crispy chickpea flour noodles)

Instructions:

For Vada:

  1. Drain the soaked urad dal and grind it into a smooth batter using minimal water.
  2. Add chopped green chilies, grated ginger, and salt to the batter. Mix well.
  3. Heat oil in a deep frying pan. Wet your hands and take small portions of the batter. Shape them into round vadas and carefully drop them into the hot oil.
  4. Fry the vadas until they are golden brown and crispy. Remove from oil and drain excess oil on paper towels.

For Yogurt Mixture:

  1. Whisk the thick yogurt in a bowl until smooth. Add cumin powder, salt, and sugar (if using). Adjust the consistency by adding water to achieve a pouring consistency.
  2. Immerse the fried vadas in the yogurt mixture. Ensure that the vadas are well-coated with the yogurt mixture. Let them soak for at least 30 minutes to absorb the flavors.

To Serve:

  1. Arrange the soaked Dahi Vadas on a serving plate.
  2. Drizzle tamarind chutney and green chutney over the vadas.
  3. Sprinkle chaat masala, roasted cumin powder, and chopped coriander leaves on top.
  4. Garnish with a generous amount of sev.
